Otherwise known as the Heart of Vlad, the heart of Dracula is one of the six body parts of the evil dark lord scattered about after his death and carefully watched over by his loyal servants until his resurrection. It is unclear how often his body is separated into pieces, but it has happened within the games at least twice so far (in both Castlevania II: Simon's Quest and Castlevania: Harmony of Dissonance).
The heart was also tied to some extent to the clock tower gears for Dracula's Castle.

Castlevania II: Simon's Quest[]
One can find this organ at Rover Mansion deep within. As important an organ as it is, it's strangely left unguarded by any of Dracula's strongest minions. It is one of the five necessary body parts needed in order to fight Dracula at the end of the game.
Its only other in-game function is to get the Ferryman in Dead River to take Simon to Brahm's Mansion.
Castlevania: Symphony of the Night[]
One of the five relics (echoing Simon's necessary five) needed to grant Alucard access to the ceremonial chamber of the Reverse Castle. It offers constant protection from Curses.
Castlevania: Harmony of Dissonance[]
In this title, it can be found in the Sky Walkway (Castle B) in a hidden room located behind the Save Room just below the boss room. It is a relic that negates petrification.
